coconut macaroon pie

We were looking for something different to serve this Easter. I made this pie and we couldn't stop eating it. It tastes like a macaroon cookie.

Ingredients

  • 9" - unbaked pie shell
  • 1/4 c. - chopped pecans
  • 2 - eggs, slightly beaten
  • 1/2 c. - water
  • 1 1/2 c. - sugar
  • 1/4 c. - flour
  • 1/4 tsp. - salt
  • 1 1/3 c. - flaked coconut
  • 1/2 c. - butter, melted

How To Make coconut macaroon pie

  • Step 1
    Sprinkle pecans over bottom of pie shell.
  • Step 2
    Combine remaining ingredients; pour into pie shell.
  • Step 3
    Bake in slow oven at 325 degrees until golden brown, and almost set, approximately 45 minutes.
