We were looking for something different to serve this Easter. I made this pie and we couldn't stop eating it. It tastes like a macaroon cookie.

Ingredients

unbaked pie shell
1/4 c.
chopped pecans

eggs, slightly beaten
1/2 c.
water
1 1/2 c.
sugar
1/4 c.
flour
1/4 tsp.
salt
1 1/3 c.
flaked coconut
1/2 c.
butter, melted

How to Make Coconut Macaroon Pie

Step-by-Step

  • 1Sprinkle pecans over bottom of pie shell.
  • 2Combine remaining ingredients; pour into pie shell.
  • 3Bake in slow oven at 325 degrees until golden brown, and almost set, approximately 45 minutes.
