We were looking for something different to serve this Easter. I made this pie and we couldn't stop eating it. It tastes like a macaroon cookie.

    unbaked pie shell
  • 1/4 c.
    chopped pecans
  • 2
    eggs, slightly beaten
  • 1/2 c.
  • 1 1/2 c.
  • 1/4 c.
  • 1/4 tsp.
  • 1 1/3 c.
    flaked coconut
  • 1/2 c.
    butter, melted

How to Make Coconut Macaroon Pie


  1. Sprinkle pecans over bottom of pie shell.
  2. Combine remaining ingredients; pour into pie shell.
  3. Bake in slow oven at 325 degrees until golden brown, and almost set, approximately 45 minutes.
