chocolate pie
This pie is my number one, all-time favorite dessert. To me, it represents love and family because it is the pie that my Grandma Dillie always baked for me when we would go to visit them "down in the country." However, I usually use a store bought crust these days (so much quicker.) Though my grandma never used a store bought crust in her life, I'm pretty sure she would approve.

Ingredients
- 1 - pie shell, baked
- 2/3 cup sugar
- 1/3 cup all purpose flour
- 1/2 teaspoon salt
- 6 tablespoons cocoa powder
- 2 cups whole milk
- 3 - egg yolks. slightly beaten (reserve whites)
- 2 tablespoons shortening
- 2 tablespoons butter
- 2 teaspoons pure vanilla extract
- FOR THE MERINGUE
- 3 - reserved egg whites
- 1/4 teaspoon cream of tartar
- 5 tablespoons sugar
- 1/2 teaspoon pure vanilla extract
How To Make chocolate pie

Step 1In the top of a double boiler, combine 2/3 cup sugar, 1/3 cup flour, 1/2 teaspoon salt and 6 tablespoons cocoa.

Step 2Add 2 cups milk and mix well.

Step 3Stir and cook over boiling water for 10 minutes, until thickened. (Do not let pan sit in the boiling water.)

Step 4Remove from heat and add about 1/2 cup of the chocolate mixture to the eggs and stir well.

Step 5Add egg mixture back to pan and mix well.

Step 6Cook over boiling water, stirring constantly, until thickened.

Step 7Remove from heat, add shortening, butter and vanilla and mix thoroughly.

Step 8Cool for 4-5 minutes, stirring occasionally, then pour into baked crust placed on a cookie sheet (for ease of handling.)

Step 9Preheat oven to 350 degrees F.

Step 10To prepare meringue, beat egg whites until frothy (a few seconds); add cream of tartar to egg whites and beat until stiff peaks form.

Step 11While continuing to beat, gradually add 5 tablespoons sugar and beat to stiff peaks.

Step 12Add 1/2 teaspoon vanilla and beat to stiff peaks.

Step 13Spread meringue over pie and bake at 350 degrees F for 12-15 minutes, until lightly browned, turning once.

Step 14Remove from oven and allow to cool for 1 hour, then place in refrigerator for at least 4 hours before serving.

Step 15Refrigerate leftovers.
