How To Make wildblueberry muffins
-
Step 1To mix add the beaten liquid ingredients to the sifted combined dry ones, in a few swift strokes, just until the flour is moistened. NOTE: just before the dry ingredients are completely moist add 2 cups of wild blueberries. the mixing is held an Absolute minimum, a light stirring of from 10 to 20 seconds the batter will be lumpy. DO NOT mix to the point of pouring , ribbon like from the spoon... but it should break in course globs. If it is beaten too long, the gluten in the flour will develop and toughen the dough. To bake, preheat your oven to 400 degree F. Grease only the bottoms of a medium size muffin cups (21/2 x1 1/4 inches), fill 2/3 full. Bake at once until golden brown about 15 to 20 minutes.. NOTE: if the muffins remain in the tins a few moments after leaving the oven they will be easier to remove. Please enjoy :)
