I came up with this last night, and it was awesome. Hope you enjoy it as much as we did. :)

These quick and easy pumpkin cheesecake bars are going to be a hit with family and friends. If someone says they don't like pumpkin, we think they'd still like this dessert. The crust has a savory butter taste. It's gooey, yet crunchy at the same time. Cream cheese and sugar make the filling sweet and creamy. The pumpkin flavor is subtle and delightful. They're divine!

Ingredients

  • CRUST:
  • 2 cups all-purpose flour
  • 1/2 cup firmly packed brown sugar
  • 1 cup butter, softened
  • CHEESECAKE FILLING:
  • 3 packages cream cheese, softened, 8 oz. each
  • 1 cup pure pumpkin
  • 3/4 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice

How To Make pumpkin cheesecake bars

  • Mixing butter, brown sugar, and flour in a bowl.
    Step 1
    Preheat oven to 350 degrees F. In a medium bowl, combine flour and brown sugar. Cut in butter with a pastry blender (or 2 forks) until the mixture is crumbly.
  • Pressing into a foil-lined baking pan.
    Step 2
    Press evenly into a 9x13 baking pan lined with heavy-duty aluminum foil.
  • Baking crust in the oven.
    Step 3
    Bake 15 minutes or until lightly browned.
  • Cream cheese and sugar mixed together.
    Step 4
    In a large bowl, beat cream cheese with 3/4 cup sugar in an electric mixer at medium speed until smooth.
  • Pumpkin, eggs, vanilla, and pumpkin spice mixed in.
    Step 5
    Add pumpkin and then add eggs, 1 at a time, and vanilla and pumpkin spice.
  • Batter ingredients combined.
    Step 6
    Stir to combine.
  • Batter poured over warm crust.
    Step 7
    Pour over warm crust.
  • Baking until filling is set.
    Step 8
    Bake for 40-45 minutes, or until filling is set.
  • Pumpkin cheesecake bars cooling.
    Step 9
    Cool.

    Once cooled down cut into squares. Serve with whipped cream.
