These wonderful fritters were shared with our friends in town, only after I had 2 for myself. They are perfect for breakfast with a cup of coffee. I think they could qualify as a desserts as well.

2 large
1/3 c
1/2 tsp
1 c
all purpose flour
1 tsp
baking powder
3 Tbsp
1/2 tsp
1/4 to 1/2 tsp
1 Tbsp
butter, melted
1 1/2 c
mixed fruit (i used 1/2 peaches diced small and 1/2 blueberries
oil for frying


1 c
powdered sugar
heavy cream (enough to make glaze)
1/2 tsp
orange zest (optional)

How to Make Peachy Blueberry Fritters


  • 1Heat oil in deep fryer or deep frying pan to 375 degrees F.
  • 2Whisk milk, eggs and vanilla together. Combine flour, baking powder, sugar, salt and nutmeg. Fold in peaches; add melted butter.
  • 3With cookie scoop, scoop batter into hot oil. The batter will sink and then rise. Cook for about 2 - 3 minutes until golden brown, depending on size of fritters. Remove fritters from oil; drain on paper; glaze.
  • 4GLAZE: Mix together and drizzle over fritters.
  • 5NOTE: you can also just roll cooled fritters in powdered sugar if you don't want to glaze.
