peachy blueberry fritters
These wonderful fritters were shared with our friends in town, only after I had 2 for myself. They are perfect for breakfast with a cup of coffee. I think they could qualify as a desserts as well. Hope you enjoy!

I go 14 fritters using a cookie scoop
Ingredients
- 2 large eggs
- 1/3 cup milk
- 1/2 teaspoon vanilla
- 1 cup all purpose flour
- 1 teaspoon baking powder
- 3 tablespoons sugar
- 1/2 teaspoon salt
- 1/4 to 1/2 teaspoon nutmeg
- 1 tablespoon butter, melted
- 1 1/2 cups mixed fruit (i used 1/2 peaches diced small and 1/2 blueberries
- - oil for frying
- GLAZE
- 1 cup powdered sugar
- - heavy cream (enough to make glaze)
- 1/2 teaspoon orange zest (optional)
How To Make peachy blueberry fritters

Step 1Heat oil in deep fryer or deep frying pan to 375 degrees F.

Step 2Whisk milk, eggs and vanilla together. Combine flour, baking powder, sugar, salt and nutmeg. Fold in peaches; add melted butter.

Step 3With cookie scoop, scoop batter into hot oil. The batter will sink and then rise. Cook for about 2 - 3 minutes until golden brown, depending on size of fritters. Remove fritters from oil; drain on paper; glaze.

Step 4GLAZE: Mix together and drizzle over fritters.

Step 5NOTE: you can also just roll cooled fritters in powdered sugar if you don't want to glaze.
