My Grandmother created this recipe over 40 years ago.

Ingredients

  • CRUST
  • 2 cups flour
  • 1/2 cup powdered sugar
  • 1 pinch salt
  • 1 cup butter
  • FILLING
  • 4 large eggs
  • 1 3/4 cups sugar
  • 6 tablespoons lemon juice
  • 4 tablespoons flour
  • 1/2 teaspoon baking powder
  • - powdered sugar

How To Make grandmother's lemon squares

  • Step 1
    CRUST: Sift flour with powdered sugar and salt.
  • Step 2
    Cut in butter until mixture resembles coarse cornmeal.
  • Step 3
    Pat into a 13 x 9” pan with a slight ridge of crust up the sides to hold the filling.
  • Step 4
    Bake at 350° for 25 minutes.
  • Step 5
    FILLING: Beat eggs slightly adding sugar gradually.
  • Step 6
    Stir in lemon juice then the flour mixed with baking powder. Stir until smooth.
  • Step 7
    Pour mixture over the baked crust and bake for 25 minutes at 350°.
  • Step 8
    Remove from oven and cool.
  • Step 9
    While still slightly warm (not hot) sprinkle additional powdered sugar over top.
  • Step 10
    When cool, cut into 1" x 2” squares. Makes approximately 60 squares.
