Ingredients
- CRUST
- 2 cups flour
- 1/2 cup powdered sugar
- 1 pinch salt
- 1 cup butter
- FILLING
- 4 large eggs
- 1 3/4 cups sugar
- 6 tablespoons lemon juice
- 4 tablespoons flour
- 1/2 teaspoon baking powder
- - powdered sugar
How To Make grandmother's lemon squares

Step 1CRUST: Sift flour with powdered sugar and salt.

Step 2Cut in butter until mixture resembles coarse cornmeal.

Step 3Pat into a 13 x 9” pan with a slight ridge of crust up the sides to hold the filling.

Step 4Bake at 350° for 25 minutes.

Step 5FILLING: Beat eggs slightly adding sugar gradually.

Step 6Stir in lemon juice then the flour mixed with baking powder. Stir until smooth.

Step 7Pour mixture over the baked crust and bake for 25 minutes at 350°.

Step 8Remove from oven and cool.

Step 9While still slightly warm (not hot) sprinkle additional powdered sugar over top.

Step 10When cool, cut into 1" x 2” squares. Makes approximately 60 squares.
