Ingredients

  • CRUST

  • 2 c
    flour
  • 1/2 c
    powdered sugar
  • 1 pinch
    salt
  • 1 c
    butter
  • FILLING

  • 4 large
    eggs
  • 1 3/4 c
    sugar
  • 6 Tbsp
    lemon juice
  • 4 Tbsp
    flour
  • 1/2 tsp
    baking powder
  • ·
    powdered sugar

How to Make Grandmother's Lemon Squares

Step-by-Step

  1. CRUST: Sift flour with powdered sugar and salt.
  2. Cut in butter until mixture resembles coarse cornmeal.
  3. Pat into a 13 x 9” pan with a slight ridge of crust up the sides to hold the filling.
  4. Bake at 350° for 25 minutes.
  5. FILLING: Beat eggs slightly adding sugar gradually.
  6. Stir in lemon juice then the flour mixed with baking powder. Stir until smooth.
  7. Pour mixture over the baked crust and bake for 25 minutes at 350°.
  8. Remove from oven and cool.
  9. While still slightly warm (not hot) sprinkle additional powdered sugar over top.
  10. When cool, cut into 1" x 2” squares. Makes approximately 60 squares.
