Ingredients
- 1 cup dried cherries, pitted
- 1 cup buttermilk
- 1 3/4 cups unbleached all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- - pinch salt
- 1 stick butter, unsalted, room temperture
- 1/4 cup sugar
- 2 - eggs, slightly beaten
How To Make dried cherry muffins

Step 1mix the cherries and buttermilk to well combined in a small bowl, and put aside to soak for 30 minutes. Preheat you oven to 350 degrees f.

Step 2Generously butter 18 muffin cups. In a large bowl, sift together flour, baking powder, baking soda, and salt. in another bowl, cream together the butter and sugar. Add the eggs and mix very well.

Step 3Make a well in center of the dry ingredients, and spoon the cherries and buttermilk in it. Then add the butter-sugar mixture. Mix until well blended- but do not overmix.

Step 4Fill the cups two thirds full with the batter, and bake till a toothpick inserted in the center comes out clean, 18 to 20 minutes. transfer muffins to wire rack to cool. serve
