Ingredients

  • 4 cups cream
  • 6 - egg whites
  • 4 - egg yolks
  • 6 tablespoons sugar
  • 3 tablespoons rose water
  • 6 - whole cloves
  • 1 - cinnamon stick
  • 1/2 - whole nutmeg
  • 1 pinch salt

How To Make martha washington's snow cream

  • Step 1
    Mix together the cream, sugar, rose water, salt, and unbeaten egg whites. Beat mixture with an egg beater, and as the foam rises, skim it off with a large spoon and set to drain in a strainer.
  • Step 2
    When as many of these "islands" have been prepared as are desired, place remaining cream in double boiler, together with the spices, and scald.
  • Step 3
    Add egg yolks, slightly beaten, and stir until thick. Strain into a glass dish. When cold, cover with the "snow."
