    egg whites
  • 4
    egg yolks
  • 6 Tbsp
  • 3 Tbsp
    rose water
  • 6
    whole cloves
  • 1
    cinnamon stick
  • 1/2
    whole nutmeg
  • 1 pinch

How to Make Martha Washington's Snow Cream


  1. Mix together the cream, sugar, rose water, salt, and unbeaten egg whites. Beat mixture with an egg beater, and as the foam rises, skim it off with a large spoon and set to drain in a strainer.
  2. When as many of these "islands" have been prepared as are desired, place remaining cream in double boiler, together with the spices, and scald.
  3. Add egg yolks, slightly beaten, and stir until thick. Strain into a glass dish. When cold, cover with the "snow."
