Martha Washington's Snow Cream
1Mix together the cream, sugar, rose water, salt, and unbeaten egg whites. Beat mixture with an egg beater, and as the foam rises, skim it off with a large spoon and set to drain in a strainer.
2When as many of these "islands" have been prepared as are desired, place remaining cream in double boiler, together with the spices, and scald.
3Add egg yolks, slightly beaten, and stir until thick. Strain into a glass dish. When cold, cover with the "snow."
