Cool Down Peach Popsicles

Susan Feliciano

This recipe came from South Beach Diet, in an email. A great way to use peaches. I believe frozen peaches could be used, also, if thawed. But really, fresh is best!

12 popsicles
4 Hr 10 Min

4 medium
peaches, peel and chopped
2 Tbsp
sugar substitute
1 c
plain lowfat greek yogurt
2 Tbsp
fresh mint or basil leaves, chopped (optional)
12 small
paper cups and wooden sticks, or popsicle molds for 12 popsicles

1In a blender, purée peaches and ½ cup of water until
smooth. Add sugar substitute, yogurt, and mint or basil leaves (if using) and blend until combined.
2Divide mixture evenly among the paper cups and insert
a wooden stick into the center of each. (Or fill popsicle molds according to manufacturer's directions.)
3Place pops in the freezer for at least 4 hours or overnight. When ready to serve, peel off paper cups or dip molds in warm water to remove popsicles.
