cool down peach popsicles
This recipe came from South Beach Diet, in an email. A great way to use peaches. I believe frozen peaches could be used, also, if thawed. But really, fresh is best! (photo from South Beach Diet)

Ingredients
- 4 medium peaches, peel and chopped
- 2 tablespoons sugar substitute
- 1 cup plain lowfat greek yogurt
- 2 tablespoons fresh mint or basil leaves, chopped (optional)
- 12 small paper cups and wooden sticks, or popsicle molds for 12 popsicles
How To Make cool down peach popsicles

Step 1In a blender, purée peaches and ½ cup of water until smooth. Add sugar substitute, yogurt, and mint or basil leaves (if using) and blend until combined.

Step 2Divide mixture evenly among the paper cups and insert a wooden stick into the center of each. (Or fill popsicle molds according to manufacturer's directions.)

Step 3Place pops in the freezer for at least 4 hours or overnight. When ready to serve, peel off paper cups or dip molds in warm water to remove popsicles.
