You may be surprised by the unique flavors incorporated into this rather sophisticated popsicle, but independently reduced balsamic vinegar and black pepper intensify the fruity flavor of the strawberries. So together, they knock it out of the park. I recommend rotating out the second fruit to continually interest your palate. Impress your friends. Serve this at your next poolside gathering!

Ingredients

  • 2 cups fresh or frozen strawberries
  • 1 cup fresh or frozen peaches, diced
  • 1/2 cup red wine
  • 1/4 cup fig balsamic vinegar
  • 1/2 cup dark brown sugar
  • 1 tablespoon vanilla
  • 1 teaspoon lemon extract
  • 1 teaspoon freshly cracked black pepper
  • 1/4 cup heavy cream

How To Make balsamic black pepper strawberry peach popsicles

  • Step 1
    Place all ingredients, save the heavy cream, in a sauce pan.
  • Step 2
    Cook on medium heat until the fruit is soft, then puree with immersion blender.
  • Step 3
    Allow to reduce by 25%. Remove from heat.
  • Step 4
    Whisk in heavy cream.
  • Step 5
    Portion into popsicle molds.
  • Step 6
    Freeze overnight.
