sweet and spicy strawberry mango salsa

This is one of my favorite summertime snacks. Its light refreshing, healthy and oh so satisfying. I love eating this salsa with Lime Tortilla Chips for that sweet and salty combination but it also goes well with Cinnamon-Sugar Tortilla Chips for a sweeter combo. It pairs well with Grilled Chicken, Pork Tenderloin and some seafood like Grilled Tuna or Salmon.

Ingredients

  • 2 cups strawberries, fresh, diced small
  • 1 large mango, firm, diced small
  • 3 - scallions, sliced thin
  • 1 medium jalapeno pepper, seeds removed and minced (can use half if you want less heat)
  • 1/2 medium green, red, or yellow pepper diced small
  • 1/4 cup fresh cilantro, chopped (can use basil or mint if you do not like cilantro)
  • 2 small limes, juiced
  • 1 tablespoon honey
  • 1/4 teaspoon black pepper, course grind

How To Make sweet and spicy strawberry mango salsa

  • Step 1
    In a medium size bowl place all your diced, chopped, sliced, and minced ingredients. Add to this mixture the black pepper, lime juice, and honey; stir together gently to combine.
  • Step 2
    Let sit at room temperature for 10 to 20 minutes before eating to allow the flavors to blend. If not eating immediately refrigerate until ready to use. This is best eaten the day it is made.
