peachy, blueberry cobbler

I had just bought some ripe peaches and decided to make a cobbler. I added blueberries just cause I love them so much and it came out wonderfully!

Ingredients

  • 2 tablespoons cornstarch
  • 1 teaspoon cinnamon
  • 1 cup sugar
  • 1/2 teaspoon ground nutmeg
  • 7 cups peeled, thick sliced peaches
  • 2 cups fresh blueberries
  • 1 tablespoon lemon juice
  • 2 cups flour
  • 8 tablespoons sugar
  • 2-1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup cold unsalted butter, cut up
  • 1-1/4 cup milk
  • 1/2 teaspoon cinnamon

How To Make peachy, blueberry cobbler

  • Step 1
    Heat oven to 400. Spray a 9" x 13" baking dish w/ cooking spray. In bowl combine, 1 cup sugar, cornstarch, 1 tsp cinnamon and nutmeg. Stir in peaches and blueberries and lemon juice. Spoon into pan, cook 15 mins. Remove from oven.
  • Step 2
    In bowl, whisk together flour, 6 tbsp sugar, baking powder and salt. Cut in butter until crumbly. Stir in milk until a soft dough forms.
  • Step 3
    Combine in small bowl, 2 tbsp sugar and remaining cinnamon. Drop dough over fruit by tbsp. Sprinkle w/ cinnamon sugar mix. Bake 30 mins, or until top is browned.
