With summer knocking on our door fruit desserts are begging to be made.
Another old recipe find.

Ingredients

  • 3
    egg whites
  • 1/2 c
    pecans, finely chopped
  • 1/4 tsp
    baking powder
  • 1 c
    sugar
  • 1/2 c
    soda crackers, finely crushed
  • 1 tsp
    vanilla
  • 1/2 pt
    whipping cream, whip to stiff peaks
  • 1 Tbsp
    powdered sugar
  • 1 can(s)
    sliced peaches, large can, drained

How to Make Peach Delight

Step-by-Step

  1. Beat egg whites stiff. Fold in sugar, baking powder, vanilla, pecans, crackers.
    Pour into a buttered 11x7-inch pan.
  2. Bake at 325 degrees for 30 min.
    Cool.
  3. Topping

    Add sugar to whipped cream. Fold in peaches.
    Put on top of cracker mixture and refrigerate overnight.
