With summer knocking on our door fruit desserts are begging to be made. Another old recipe find.

Ingredients

  • 3 - egg whites
  • 1/2 cup pecans, finely chopped
  • 1/4 teaspoon baking powder
  • 1 cup sugar
  • 1/2 cup soda crackers, finely crushed
  • 1 teaspoon vanilla
  • 1/2 pint whipping cream, whip to stiff peaks
  • 1 tablespoon powdered sugar
  • 1 can sliced peaches, large can, drained

How To Make peach delight

  • Step 1
    Beat egg whites stiff. Fold in sugar, baking powder, vanilla, pecans, crackers. Pour into a buttered 11x7-inch pan.
  • Step 2
    Bake at 325 degrees for 30 min. Cool.
  • Step 3
    Topping Add sugar to whipped cream. Fold in peaches. Put on top of cracker mixture and refrigerate overnight.
