Mom's Pop Over Pie

My mom (Billie Blair, aka witch1-2-3) got this recipe from her friend Jackie Hoover back in the 70's.

It comes together so easy and you can use any fruit you have on hand. Today I am using some home canned apricots that I need to get rid of. In the past I have used canned peaches, cherry pie filling, apple pie filling, and frozen blueberries and raspberries.

Serve it up with vanilla ice cream or a splash or cream, a squirt of whipped cream, or just plain (like I am going to do).

A quick dessert doesn't get any easier than this! Thanks Mom! This one goes down in the books as FANTASTIC!

How to Make Mom's Pop Over Pie

Step-by-Step

  1. Melt one stick of butter in a 350 degree oven in a 9x13 baking pan that has been coated with butter or nonstick spray
  2. Mix together flour, sugar, baking powder, milk and salt.
  3. When butter has melted, pour the batter over the melted butter.
  4. Spoon fruit of choice on top of batter. Cherry pie filling is excellent as is blueberries or peaches or a combination of whatever you like. Canned peaches with French Vanilla Ice Cream is to die for.
