My mom (Billie Blair, aka witch1-2-3) got this recipe from her friend Jackie Hoover back in the 70's. It comes together so easy and you can use any fruit you have on hand. Today I am using some home canned apricots that I need to get rid of. In the past I have used canned peaches, cherry pie filling, apple pie filling, and frozen blueberries and raspberries. Serve it up with vanilla ice cream or a splash or cream, a squirt of whipped cream, or just plain (like I am going to do). A quick dessert doesn't get any easier than this! Thanks Mom! This one goes down in the books as FANTASTIC!

Ingredients

  • 1 stick butter
  • 1 cup flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • pinch - salt
  • 3/4 cup milk
  • 2 cups fruit (your choice)...today i used my own home canned apricots

How To Make mom's pop over pie

  • Step 1
    Melt one stick of butter in a 350 degree oven in a 9x13 baking pan that has been coated with butter or nonstick spray
  • Step 2
    Mix together flour, sugar, baking powder, milk and salt.
  • Step 3
    When butter has melted, pour the batter over the melted butter.
  • Step 4
    Spoon fruit of choice on top of batter. Cherry pie filling is excellent as is blueberries or peaches or a combination of whatever you like. Canned peaches with French Vanilla Ice Cream is to die for.
