Another recipe from Family Circle Hometown Favorites (photo theirs) that looks so delicious you just want to gobble up the picture! I am making this as soon as I get some pears from my organic delivery company. Can't wait to try it!
Cut a thin slice from the bottom of each pear so the pears stand up. Working through the bottom of each pear, use a melon baller to remove the core.
In a small bowl combine cranberries (or cherries), walnuts, lemon juice, and sugar. Spoon cranberry mixture into the hollowed-out bottoms of pears. Stand pears in an ungreased 2-qt. square baking dish. Add the water to baking dish. Pour maple syrup over and around the pears. Sprinkle any remaining cranberry mixture into bottom of dish.
Bake in a preheated 350º oven, covered, for 20 minutes. Uncover; bake for 20 to 25 minutes more or until pears are tender, basting occasionally with cooking liquid.
To serve, spoon any remaining cooking liquid over pears. If desired, cut pears in half, topping with remaining filling from bottom of dish. Serve warm. A dollop of whipped cream is not a bad idea.
