Ingredients
- 4 cups blackberries
- 1/4 cup sugar
- 1 tablespoon whole wheat flour
- 1/4 teaspoon lemon zest
- 1 tablespoon lemon juice
- 1 cup whole wheat flour
- 3/4 cup cornmeal
- 1-1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 large egg yolk
- 1/2 cup buttermilk
- 1/4 cup canola oil
- 3 tablespoons sugar
- 1/2 cup frozen corn kernels. thawed.
How To Make corny blackberry cobbler

Step 1Heat oven to 375. Spray a 9" pan w/ cooking spray. In bowl, combine berries, 1/4 cup sugar, 1 tbsp flour, lemon zest and lemon juice.

Step 2In bowl whisk together flour, cornmeal. baking powder and baking soda. In small bowl, whisk together egg yolk, buttermilk, oil and 3 tbsp sugar.

Step 3Add egg yolk mix to dry ingredients, stir to blend. Fold in corn. Pour berry mix into pan, spoon batter over berries. Place pan on a baking sheet and bake 45 mins.
