AN EASY TAPIOCA TO MAKE. I MADE THIS WHEN I WAS A TEENAGER. PREP TIME SHOULD SHOW THE COOLING TIME.

  • 1/4 cup sugar
  • 2 tablespoons quick-cooking tapioca
  • 1 1/4 cups orange juice, fresh
  • 1 1/4 cups cool whipp, thawed
  • 4 - maraschino cherries, optional

  • Step 1
    IN A SAUCE PAN, MIX TOGETHER THE SUGAR, TAPIOCA AND ORANGE JUICE---'LET IT SET 5 MINUTES'
  • Step 2
    HEAT TO BOILING OVER MEDIUM-HIGH HEAT, STIRRING CONSTANTLY.
  • Step 3
    REMOVE FROM HEAT; COOL 20 MINUTES.
  • Step 4
    NOW STIR TAPIOCA WITH A RUBBER SPATULA.
  • Step 5
    FOLD IN 1 CUP OF THE COOL WHIP.
  • Step 6
    DIVIDE TAPIOCA AMONG 4 DESSERT DISHES; REFRIERATE UNTIL SERVING TIME.
  • Step 7
    WHEN READY TO SERVE, TOP WITH A DOLLOP OF COOL WHIP; THEN TOP WITH A MARSACHINO CHERRY.
