When company was coming on short notice, I had some lovely, ripe pears & apples but not enough of each for any specific dessert recipe & no time for a run to the store. I also hate to waste food, so I winged it. I love a “Brown Betty” or Fruit “Crisp Bake”, and tried to cut the fat content, by using the applesauce instead of butter in the crust. No one even noticed! I also had a bit of leftover Lemon Glaze, and it added a nice layer of flavor, but warm with vanilla ice cream would make me happy too! It was a big hit!

Ingredients

  • 4 large ripe pears, peeled cored & diced
  • 3 medium tart apples, peeled cored & diced
  • 1 cup sugar
  • 1/2 cup lemon juice
  • 1 tablespoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup dry quick cooking oats
  • 1 cup flour
  • 1 cup almond flour*
  • 1/2 cup 1 cube butter, melted**
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 4 ounces cream cheese, softened
  • 1 1/2 cups powdered sugar
  • 1/2 teaspoon lemon extract
  • 1 teaspoon lemon juice
  • - optional: ice-cream

How To Make apple pear bake: rustic or fancy…

  • Step 1
    Mix pears, apples, sugar, lemon juice, cinnamon, nutmeg & salt in a 2 qt. pan & stir to dissolve sugar. Bring to a simmer for 15 to 25 minutes. Stir in the oats, & let cool.
  • Step 2
    Meanwhile: Line a 9” x 13” pan with parchment paper spray with oil & coat with flour. Melt the butter. Mix the flours & 1/4 C sugar, add melted butter well & press into pan bottom. If too sticky sprinkle a small amount of flour over the top while pressing. Pour the fruit mix over the top.
  • Step 3
    Bake at 350° for 35-45 minutes until browned around the edges. Remove & cool for 20 minutes. Serve as is, with ice-cream (Rustic) or drizzled with a cream cheese glaze (Fancy!)
  • Step 4
    *(Traders Joe's carries) or 1 1/3 C toasted almonds grated in food processor **or 1/3 C applesauce if you want something lighter.
