Everyone seems to love oatmeal cookies. We are fond of them so I decided to add some new flavors for a variety of tastes in the cookie. We really enjoyed them.

Ingredients

  • 1 cup butter, softened
  • 1 cup brown sugar, firmly packed
  • 1/2 cup granulated sugar
  • 2 - eggs
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups all purpose flour
  • 1/2 cup pecans, chopped
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 3 cups quaker oats
  • 1/2 cup chopped dates
  • 1/2 cup coconut
  • 1/2 cup dried cranberries
  • - glaze (optional)

How To Make tropical oatmeal cookies

  • Step 1
    Heat oven to 350 degrees. Beat together butter and sugars until creamy. Add eggs and vanilla; beat well. Combine flour, baking soda, cinnamon, baking powder, and salt; add to egg mixture and mix well. Stir in oats, dates, coconut, pecans, and dried cranberries. Mix well with spoon.
  • Step 2
    Drop by rounded tablespoonfuls onto ungreased cookie sheet. Bake 10 to 12 minutes, or until golden brown. Cool 1 minutes on cookie sheet; remove to wire rack. Yield: Approximately 4 dozen.
  • Step 3
    Glaze: Mix together 1 1/2 cups powdered sugar, 1 to 2 tablespoons of milk (add more if needed for drizzling consistency), 1/2 tsp. of vanilla. Drizzle on top of cookies.
