Again another Christmas treat from my Nana...hope I'm not boring anybody with these, but she was a VERY special lady in my life. She always tried to make the Holidays and family get-togethers special. This is one of my favorites as she always made some with the nuts called for, but having a grandchild highly allergic she always made some special for me so I didn't feel left out.

Ingredients

  • 2 2/3 cups all purpose flour
  • 1/3 cup brown sugar, firmly packed (light or dark, your choice)
  • 1/2 cup pure cane sugar
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon all spice
  • 2 sticks unsalted butter (room temperature
  • 1/2 teaspoon salt
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon honey
  • 2 tablespoons dry sherry
  • 2 tablespoons rum
  • 1 cup dried figs
  • 1 cup candied pineapple
  • 1 cup candied red cherries
  • 1 cup candied green cherries
  • 6 ounces chopped pecans (optional)

How To Make stain glass cookies

  • Step 1
    In a large mixing bowl, cream the butter with the sugar, brown sugar, all spice, and cloves on medium for about three minutes. Add the egg and mix until incorporated
  • Step 2
    With the mixer still on low slowly add the flour and a 1/4 teaspoon of salt mix until incorporated, DO NOT over mix. Add the fruit, honey, sherry, and rum
  • Step 3
    Cover and refrigerate overnight.
  • Step 4
    Take the bowl out and give it a good stir to reincorporate any liquid. Using a tablespoon, spoon out a half a tablespoon of cookie dough, roll into a ball and place on an ungreased cookie sheet 1/2 inch apart
  • Step 5
    Bake at 350 for 15-18 minutes or until light golden brown
