stain glass cookies
Again another Christmas treat from my Nana...hope I'm not boring anybody with these, but she was a VERY special lady in my life. She always tried to make the Holidays and family get-togethers special. This is one of my favorites as she always made some with the nuts called for, but having a grandchild highly allergic she always made some special for me so I didn't feel left out.

Makes 5 dozen
Ingredients
- 2 2/3 cups all purpose flour
- 1/3 cup brown sugar, firmly packed (light or dark, your choice)
- 1/2 cup pure cane sugar
- 1/2 teaspoon ground cloves
- 1/4 teaspoon all spice
- 2 sticks unsalted butter (room temperature
- 1/2 teaspoon salt
- 1 tablespoon freshly squeezed lemon juice
- 1 tablespoon honey
- 2 tablespoons dry sherry
- 2 tablespoons rum
- 1 cup dried figs
- 1 cup candied pineapple
- 1 cup candied red cherries
- 1 cup candied green cherries
- 6 ounces chopped pecans (optional)
How To Make stain glass cookies

Step 1In a large mixing bowl, cream the butter with the sugar, brown sugar, all spice, and cloves on medium for about three minutes. Add the egg and mix until incorporated

Step 2With the mixer still on low slowly add the flour and a 1/4 teaspoon of salt mix until incorporated, DO NOT over mix. Add the fruit, honey, sherry, and rum

Step 3Cover and refrigerate overnight.

Step 4Take the bowl out and give it a good stir to reincorporate any liquid. Using a tablespoon, spoon out a half a tablespoon of cookie dough, roll into a ball and place on an ungreased cookie sheet 1/2 inch apart

Step 5Bake at 350 for 15-18 minutes or until light golden brown
