Again another Christmas treat from my Nana...hope I'm not boring anybody with these, but she was a VERY special lady in my life. She always tried to make the Holidays and family get-togethers special. This is one of my favorites as she always made some with the nuts called for, but having a grandchild highly allergic she always made some special for me so I didn't feel left out.

Ingredients

  • 2 2/3 c
    all purpose flour
  • 1/3 c
    brown sugar, firmly packed (light or dark, your choice)
  • 1/2 c
    pure cane sugar
  • 1/2 tsp
    ground cloves
  • 1/4 tsp
    all spice
  • 2 stick
    unsalted butter (room temperature
  • 1/2 tsp
    salt
  • 1 Tbsp
    freshly squeezed lemon juice
  • 1 Tbsp
    honey
  • 2 Tbsp
    dry sherry
  • 2 Tbsp
    rum
  • 1 c
    dried figs
  • 1 c
    candied pineapple
  • 1 c
    candied red cherries
  • 1 c
    candied green cherries
  • 6 oz
    chopped pecans (optional)

How to Make Stain Glass Cookies

Step-by-Step

  1. In a large mixing bowl, cream the butter with the sugar, brown sugar, all spice, and cloves on medium for about three minutes. Add the egg and mix until incorporated
  2. With the mixer still on low slowly add the flour and a 1/4 teaspoon of salt mix until incorporated, DO NOT over mix. Add the fruit, honey, sherry, and rum
  3. Cover and refrigerate overnight.
  4. Take the bowl out and give it a good stir to reincorporate any liquid. Using a tablespoon, spoon out a half a tablespoon of cookie dough, roll into a ball and place on an ungreased cookie sheet 1/2 inch apart
  5. Bake at 350 for 15-18 minutes or until light golden brown
