spicy ginger molasses cookies

I wanted a new molasses cookie, one loaded with ginger! This is what I came up with. It has some Ginger Kick!!!

Ingredients

  • 1 1/2 cups butter
  • 2 cups brown sugar, firmly packed
  • 3 - eggs
  • 1/2 cup molasses
  • 5 cups all purpose flour
  • 1 tablespoon baking soda
  • 1/2 teaspoon sea salt
  • 2 teaspoons cinnamon
  • 2 teaspoons all spice
  • 2 teaspoons ground ginger
  • 1/2 teaspoon course ground black pepper
  • 1 1/2 cups crystalized ginger, chopped fine
  • - raw sugar, for rolling

How To Make spicy ginger molasses cookies

  • Step 1
    Preheat oven to 350. Mix together butter, sugars, egg and molasses until creamy. Sift together dry ingredients and blend into creamy mixture, stir in crystallized ginger. Roll into 1 1/2" balls, roll in raw sugar, flatten slightly with bottom of a glass or palm of your hand. I like to sprinkle a little extra raw sugar onto center of cookie after flattening, before baking. Bake at 350 for 10-12 minutes.
