soft and chewy peanut butter cookies
I've always loved peanut butter cookies, until one day I chipped a tooth on one. Then I was hesitant about eating my favorite cookie. That is until someone made these. I took a bite and I was hooked! They are soft and chewy and have a big yummy flavor. Last summer I made up a batch and made ice cream sandwiches out of them. What a treat! I let the vanilla ice cream soften a bit, then scooped a big scoopful and pressed it between two of these cookies. Then I individually wrapped the sandwiches in wax paper and put them in the freezer. They were devoured quickly.

Ingredients
- 2 cups all purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/4 cups dark brown sugar (packed)
- 1 1/4 cups sugar
- 1 cup butter, softened
- 3 large eggs
- 1 cup creamy peanut butter
- 2 teaspoons vanilla extract
How To Make soft and chewy peanut butter cookies

Step 1Heat oven to 300 degrees F.

Step 2In a large mixing bowl, beat the sugars together, add the butter and mix until all form a grainy paste. Add the eggs, peanut butter and the vanilla. Beat on medium speed until light and fluffy.

Step 3Add the dry ingredients and mix on low speed just until fully combined. Do not over mix.

Step 4Drop a rounded tablespoonful of the cookie dough onto an ungreased cookie sheet. Slightly crisscross flatten the cookies with a fork that has been dipped in water. Bake for about 18-22 minutes just until the edges begin to turn a golden brown. Remove from oven and cool.
