soft and chewy peanut butter cookies

I've always loved peanut butter cookies, until one day I chipped a tooth on one. Then I was hesitant about eating my favorite cookie. That is until someone made these. I took a bite and I was hooked! They are soft and chewy and have a big yummy flavor. Last summer I made up a batch and made ice cream sandwiches out of them. What a treat! I let the vanilla ice cream soften a bit, then scooped a big scoopful and pressed it between two of these cookies. Then I individually wrapped the sandwiches in wax paper and put them in the freezer. They were devoured quickly.

Ingredients

  • 2 cups all purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/4 cups dark brown sugar (packed)
  • 1 1/4 cups sugar
  • 1 cup butter, softened
  • 3 large eggs
  • 1 cup creamy peanut butter
  • 2 teaspoons vanilla extract

How To Make soft and chewy peanut butter cookies

  • Step 1
    Heat oven to 300 degrees F.
  • Step 2
    In a large mixing bowl, beat the sugars together, add the butter and mix until all form a grainy paste. Add the eggs, peanut butter and the vanilla. Beat on medium speed until light and fluffy.
  • Step 3
    Add the dry ingredients and mix on low speed just until fully combined. Do not over mix.
  • Step 4
    Drop a rounded tablespoonful of the cookie dough onto an ungreased cookie sheet. Slightly crisscross flatten the cookies with a fork that has been dipped in water. Bake for about 18-22 minutes just until the edges begin to turn a golden brown. Remove from oven and cool.
