peanut butter sandwich cookies

I was tired of baking the same Peanut Butter Cookies so I decided to make sandwich cookies. Since it's getting close to the 4th of July, I decided to make cutouts using my Star cookie cutter. These cookies are husband approved!

Ingredients

  • - 1/2 cup shortening
  • - 1/2 cup sugar
  • - 1/2 cup brown sugar
  • - 1 teaspoon vanilla
  • - 1/2 cup creamy peanut butter
  • - 1 egg
  • - 1 1/4 cups flour
  • - 3/4 teaspoon soda
  • - 1/2 teaspoon baking powder
  • - dash of salt, optional
  • CREAMY FILLING
  • - 1/2 cup (1 stick) butter, softened
  • - 1/2 cup creamy peanut butter
  • - 2 cups powdered sugar
  • - 1 teaspoon vanilla
  • - colored sugars

How To Make peanut butter sandwich cookies

  • Step 1
    Line cookie sheets with parchment paper. In medium bowl, cream shortening, sugars and vanilla. Stir in peanut butter and egg; mix until blended. In small bowl, combine flour, soda and baking powder. Gradually, add to creamed mixture.
  • Step 2
    Preheat oven to 350 degrees. On a lightly floured surface, roll out dough. Using a 2" cookie cutter, cut dough into shapes. (If the dough becomes crumbly, mix in additional shortening about a tablespoon at a time). Place cookies on prepared cookie sheets. Sprinkle with colored sugars. Bake 8-10 minutes or until lightly browned. Remove from cookie sheets and cool completely on wire racks.
  • Step 3
    In medium bowl, using an electric mixer, combine butter and peanut butter. Gradually, add powdered sugar and beat until smooth. Stir in vanilla. If mixture is too thick, add a small amount of cream. If mixture is too thin, add additional powdered sugar until desired consistency. Spread filling on 1/2 of the cooled cookies. Top with remaining cookies. Store in covered containers.
