I was tired of baking the same Peanut Butter Cookies so I decided to make sandwich cookies. Since it's getting close to the 4th of July, I decided to make cutouts using my Star cookie cutter. These cookies are husband approved!

How to Make Peanut Butter Sandwich Cookies

Step-by-Step

  1. Line cookie sheets with parchment paper. In medium bowl, cream shortening, sugars and vanilla. Stir in peanut butter and egg; mix until blended. In small bowl, combine flour, soda and baking powder. Gradually, add to creamed mixture.
  2. Preheat oven to 350 degrees. On a lightly floured surface, roll out dough. Using a 2" cookie cutter, cut dough into shapes. (If the dough becomes crumbly, mix in additional shortening about a tablespoon at a time). Place cookies on prepared cookie sheets. Sprinkle with colored sugars. Bake 8-10 minutes or until lightly browned. Remove from cookie sheets and cool completely on wire racks.
  3. In medium bowl, using an electric mixer, combine butter and peanut butter. Gradually, add powdered sugar and beat until smooth. Stir in vanilla. If mixture is too thick, add a small amount of cream. If mixture is too thin, add additional powdered sugar until desired consistency. Spread filling on 1/2 of the cooled cookies. Top with remaining cookies. Store in covered containers.
