Paleo "Sugar" Cookies

My batch of cookies produced 32. After 2 teenagers, a toddler, a husband, and myself we had 12 left after one sitting. These are so delicious and easy. If you have a loved one with dietary restrictions give these a try!

  • 1 c
    almond flour
  • 1/4 c
    coconut flour
  • 2 Tbsp
  • 1/2 tsp
    baking soda
  • 1/4 tsp
  • 1 large
  • 2 tsp
    pure vanilla extract
  • 1/4 tsp
    pure almond extract
  • 1/3 c
    real maple syrup
  • 2 Tbsp
    coconut oil, melted

  • 1/2 c
    refined coconut oil, softened
  • 1/4 c
    real maple syrup
  • 1/4 tsp
  • 2 tsp
    coconut flour

How to Make Paleo "Sugar" Cookies


  1. Preheat oven to 350˚
  2. Whisk together dry ingredients
  3. Whisk together wet ingredients
  4. Add wet ingredients to dry and mix together. You can use an electric mixer but it's not necessary.
  5. Place dough in refrigerator for 20-30 min. until it firms up.
  6. Roll the dough in plastic wrap into a log. Place in the freezer 
for 2 hours (or more, until very firm). Remove and slice into ¼” slices.
  7. Place on parchment lined baking sheet and bake 10-12 minutes or until edges are lightly browned and center is firm.
  8. Cool on baking sheets for 10 minutes, then transfer cookies to wire racks to cool completely.
  9. Frosting (Optional): Mix together frosting ingredients. Refrigerate until firm enough to spread. Spread on cooled cookies.
