I don't remember where I got this recipe, but it is our favorite peanut butter cookie. They come out of the oven soft, but as they cool they have a little "tooth" to them, but don't turn crunchy until a day or so later. (Depends on how you store them.)

I used to love dipping my PButter cookies in orange Kool-Aid as a child, but now that combination just seems weird to me. Enjoy them with your fav beverage!

Ingredients

  • 1 c
    butter, soft
  • 1 c
    peanut butter, creamy
  • 1 c
    white sugar
  • 1 c
    brown sugar, packed
  • 2
    eggs
  • 2 1/2 c
    all purpose flour
  • 1 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1 1/2 tsp
    baking soda

How to Make Our Favorite Peanut Butter Cookie Recipe

Step-by-Step

  1. Cream butter, peanut butter and both sugars in mixing bowl. Add in eggs. Mix well.
  2. In a separate bowl combine dry ingredients.
  3. Gradually add flour mixture to butter / sugar / egg mixture and stir or beat until blended together.
  4. Chill one hour in covered bowl.
  5. Scoop out enough dough to make one inch peanut butter dough balls. (I use a small 1/2 inch cookie dough scoop.)
  6. Roll dough balls in white sugar until coated all over.
  7. Place on baking sheet with Silpat mat. Slightly flatten with tines of a fork and make a criss cross pattern on top.
  8. Bake 8-10 minutes, or until cookies just start to turn brown.
