I don't remember where I got this recipe, but it is our favorite peanut butter cookie. They come out of the oven soft, but as they cool they have a little "tooth" to them, but don't turn crunchy until a day or so later. (Depends on how you store them.) I used to love dipping my PButter cookies in orange Kool-Aid as a child, but now that combination just seems weird to me. Enjoy them with your fav beverage!

yield 24 cookies? (Prep time does not include the 1 hr. for chilling dough)

Ingredients

  • 1 cup butter, soft
  • 1 cup peanut butter, creamy
  • 1 cup white sugar
  • 1 cup brown sugar, packed
  • 2 - eggs
  • 2 1/2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons baking soda

How To Make our favorite peanut butter cookie recipe

  • Step 1
Cream butter, peanut butter and both sugars in mixing bowl. Add in eggs. Mix well.
  • Step 2
In a separate bowl combine dry ingredients.
  • Step 3
Gradually add flour mixture to butter / sugar / egg mixture and stir or beat until blended together.
  • Step 4
Chill one hour in covered bowl.
  • Step 5
Scoop out enough dough to make one inch peanut butter dough balls. (I use a small 1/2 inch cookie dough scoop.)
  • Step 6
Roll dough balls in white sugar until coated all over.
  • Step 7
Place on baking sheet with Silpat mat. Slightly flatten with tines of a fork and make a criss cross pattern on top.
  • Step 8
Bake 8-10 minutes, or until cookies just start to turn brown.
