Ingredients

  • 1 cup all purpose flour
  • 1 cup quick cooking oats
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon baking soda
  • 1/2 cup butter, softened
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 - egg
  • 1/2 cup carrot, shredded
  • 1/2 cup coconut, flaked, unsweetened
  • 1/2 cup dried cranberries (optional-or raisins)

How To Make oatmeal carrot cookies

  • Step 1
    Preheat oven to 350 F. Line a cookie sheet with baking parchment.
  • Step 2
    In a medium bowl mix the flour, oats, cinnamon, nutmeg and baking soda together.
  • Step 3
    In the bowl of a stand mixer or in a large bowl if mixing by hand, cream the butter, sugars and egg until light and fluffy.
  • Step 4
    Add in the dry ingredients and mix again until well blended. Stir in shredded carrot, coconut and cranberries and mix well.
  • Step 5
    Using 1 tablespoon scoop, drop the dough on the prepared cookie sheet, about 3 inches apart.
  • Step 6
    Bake for 12 to 15 minutes or until golden brown at the edges. Allow the cookies to cool on wired rack.
