My youngest son has autism and baking is great therapy for him. He created these by combining 3 or 4 different recipes. We named them after him, Logan. Everyone loves these cookies and I have shared this recipe so many times.

Ingredients

  • 3/4 c
    butter flavor shortening
  • 1 c
    brown sugar
  • 1 large
    egg
  • 1 box
    instant vanilla pudding mix
  • 2 1/2 c
    old fashioned oats
  • 1 c
    all purpose flour
  • 1 c
    chopped walnuts
  • 1/3 c
    water
  • 1 tsp
    vanilla
  • 1 tsp
    baking soda
  • 1 tsp
    salt
  • 1 1/2 c
    semi sweet chocolate chips
  • 1 c
    coconut

How to Make Logan's Cookies

Step-by-Step

  1. Beat sugar and shortening, add egg, water, vanilla, and pudding mix and beat well
  2. Combine oats, flour, salt, soda.
  3. Add to creamed mixture.
  4. Stir in nuts, coconut and chocolate chips.
  5. Scoop out and flatten slightly. Bake at 350 for 11-13 minutes until browned. Cool on rack
