These Asian-inspired treats have a cake-like texture with the exotic flavors of lemongrass and coconut. This gives these treats a mild, not-too-sweet citrus flavor.

Ingredients
- 1 cup butter, softened
- 2 cups all purpose flour
- 1/2 cup confectioner's sugar
- 1 teaspoon lemon extract
- 1 teaspoon lemon zest, grated
- 2/3 cup coconut, shredded
- 2 1/2 tablespoons lemongrass, puree
- 24 ounces vanilla or white chocolate chips
How To Make lemongrass snowballs

Step 1Preheat oven to 350 degrees

Step 2Beat butter and sugar with an electric mixer until creamy

Step 3Add lemon extract and lemon zest

Step 4Gradually beat in flour, coconut and lemongrass.

Step 5Stir in 1 1/2 cups white chocolate chips

Step 6Shape dough into 1-inch balls and place 1/2 inch apart on parchment-lined baking sheets.

Step 7Bake on middle rack until cookies are set and light golden brown on bottom, 10 to 12 minutes.

Step 8Cool on baking sheets 2 minutes; remove to cooling racks to cool completely.

Step 9Microwave remaining white chocolate chips about 20 second at a time until melted. Drizzle over cookies.

Step 10Sprinkle with additional coconut.
