Ingredients

  • CRUST:

  • 1 1/2 c
    flour
  • 1/2 c
    butter or margarine, melted
  • 1/2 c
    brown sugar, firmly packed
  • FILLING:

  • 2
    eggs, beaten
  • 1 c
    brown sugar, packed
  • 1 1/2 c
    coconut
  • 1 c
    chopped nuts (pecans or walnuts)
  • 2 Tbsp
    flour
  • 1/2 tsp
    baking powder
  • 1/4 tsp
    salt
  • 1/2 tsp
    vanilla
  • FROSTING:

  • 1 c
    confectioners sugar
  • ·
    juice of 1 lemon
  • 1 tsp
    melted butter or margarine

How to Make Lemon Coconut Bars

Step-by-Step

  1. Mix together dough ingredients for crust. Press with fingers in a greased 9 x 13 inch pan. Bake for 10 minutes at 275 degrees.
  2. Meanwhile, combine filling ingredients; spread on top of baked crust. Increase oven temperature to 350. Now bake 20 minutes.
  3. While still warm, spread with frosting by combining confectioners sugar, melted butter and lemon juice. Cool to lukewarm. Cut into bars or squares.
