CRUST:

1 1/2 c
flour
1/2 c
butter or margarine, melted
1/2 c
brown sugar, firmly packed

FILLING:

2
eggs, beaten
1 c
brown sugar, packed
1 1/2 c
coconut
1 c
chopped nuts (pecans or walnuts)
2 Tbsp
flour
1/2 tsp
baking powder
1/4 tsp
salt
1/2 tsp
vanilla

FROSTING:

1 c
confectioners sugar
juice of 1 lemon
1 tsp
melted butter or margarine

How to Make Lemon Coconut Bars

Step-by-Step

  • 1Mix together dough ingredients for crust. Press with fingers in a greased 9 x 13 inch pan. Bake for 10 minutes at 275 degrees.
  • 2Meanwhile, combine filling ingredients; spread on top of baked crust. Increase oven temperature to 350. Now bake 20 minutes.
  • 3While still warm, spread with frosting by combining confectioners sugar, melted butter and lemon juice. Cool to lukewarm. Cut into bars or squares.
