When I take these to family gatherings or church socials they disappear every time, they are so good!

Ingredients

  • CRUST:
  • 1 1/2 cups flour
  • 1/2 cup butter or margarine, melted
  • 1/2 cup brown sugar, firmly packed
  • FILLING:
  • 2 - eggs, beaten
  • 1 cup brown sugar, packed
  • 1 1/2 cups coconut
  • 1 cup chopped nuts (pecans or walnuts)
  • 2 tablespoons flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla
  • FROSTING:
  • 1 cup confectioners sugar
  • - juice of 1 lemon
  • 1 teaspoon melted butter or margarine

How To Make lemon coconut bars

  • Step 1
    Mix together dough ingredients for crust. Press with fingers in a greased 9 x 13 inch pan. Bake for 10 minutes at 275 degrees.
  • Step 2
    Meanwhile, combine filling ingredients; spread on top of baked crust. Increase oven temperature to 350. Now bake 20 minutes.
  • Step 3
    While still warm, spread with frosting by combining confectioners sugar, melted butter and lemon juice. Cool to lukewarm. Cut into bars or squares.
