My son loves lemon so I decided to give these cookies a try. This recipe is a keeper.

Ingredients

  • - 1 (8 ounce) package cream cheese, softened
  • - 1 stick (8 tablespoons) cold butter, cubed
  • - 1 egg
  • - 1/2 teaspoon clear or regular imitation vanilla extract
  • - 2 teaspoons lemon extract
  • - 1 box lemon cake mix
  • - 1/3 cup powdered sugar
  • LEMON GLAZE
  • - 1 1/2 cups powdered sugar
  • - 3-4 tablespoons half & half
  • - 1 teaspoon lemon extract
  • - 3-4 drops yellow food color
  • - edible glitter, colored sprinkles or colored sugar, optional

How To Make lemon cake mix cookies

  • Step 1
    Preheat oven to 350 degrees. Line cookie sheets with parchment paper. In a mixing bowl, with an electric mixer, beat cream cheese and butter until creamy. Beat in egg and vanilla and lemon extracts. Gradually, add the cake mix.
  • Step 2
    Pour 1/3 cup powdered sugar in a small bowl. Using a cookie scoop or a tablespoon, drop rounded amounts of dough, roll in powdered sugar and place on cookie sheets. Bake 10-12 minutes or until edges begin to lightly brown. Leave cookies on cookie sheets for 2 minutes; remove to wire rack. Glaze warm cookies.
  • Step 3
    Lemon Glaze: In small bowl, combine powdered sugar, half & half and lemon extract. Stir in food coloring. Drizzle over cookies. If desired, IMMEDIATELY before glaze begins to set, decorate. Makes 3 dozen.
