Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 cup shredded coconut
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 3 ounces cream cheese, cut into small pieces
  • - zest of 1 lime
  • 1/2 cup butter, melted and still warm
  • 1 large egg, room temperature
  • 1 tablespoon milk
  • 1 tablespoon lime juice
  • 1/2 cup powdered sugar

How To Make key lime coconut cookies

  • Step 1
    Preheat oven to 350 degrees and line with cookie sheets with parchment paper. Place sugar, cream cheese and lime zest in a large bowl. Pour warm butter over sugar and cream cheese and whisk until it's all combined. Add egg, milk and lime juice, whisk well. Add flour, salt, baking soda, baking powder and coconut. Mix with rubber spatula until combined. Form into 1-inch balls and lightly coat with powdered sugar. Place cookies on baking sheet 2-inches apart. Bake 11-12 minutes. Makes about 2 dozen cookies.
