WET INGREDIENTS

1 c
coconut oil
3/4 c
white sugar
3/4 c
dark brown sugar

instant strawberry pudding mix

shredded coconut
1 c
white chocolate chips
1 c
semi-sweet chocolate chips
20 oz
crushed pineapple

How to Make It's Five O' Clock Somewhere Cookies

Step-by-Step

  • 1Dump pineapple into large sieve to drain away juices. Leave in sieve at least 20 minutes, stirring occasionally to release trapped moisture.
  • 2Dice mango and set aside on paper towel, to draw out some of the moisture.
  • 3Toast 1 cup of the coconut in a pan over low-medium heat, until coconut is lightly browned. Set aside to cool. Reserve rest of untoasted coconut.
  • 4Preheat oven to 350.
  • 5Sift together flour, baking soda and salt in a large bowl. Set aside.
  • 6In separate bowl, beat together coconut oil, sugars and eggs. Add vanilla and pudding mix. Mix well.
  • 7Fold wet bowl into flour bowl. Add the chocolate chips, toasted coconut, and 3/4 of the pineapple. Fold gently until all incorporated together.
  • 8On top of the cookie balls, press down a pinch of raw coconut, pinch of pineapple and pinch of mango.
  • 9Roll tablespoon-full amounts in your hand and place on greased cookie sheet / pan.
  • 10Bake for 8-10 minutes.
