Ingredients
- DRY INGREDIENTS
- 2 1/2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- WET INGREDIENTS
- 1 cup coconut oil
- 3/4 cup white sugar
- 3/4 cup dark brown sugar
- 2 - eggs
- 2 teaspoons vanilla extract
- 1 package instant strawberry pudding mix
- ADDITIONALS:
- 1 1/2 cups shredded coconut
- 1 cup white chocolate chips
- 1 cup semi-sweet chocolate chips
- 20 ounces crushed pineapple
- 1 - mango
How To Make it's five o' clock somewhere cookies

Step 1Dump pineapple into large sieve to drain away juices. Leave in sieve at least 20 minutes, stirring occasionally to release trapped moisture.

Step 2Dice mango and set aside on paper towel, to draw out some of the moisture.

Step 3Toast 1 cup of the coconut in a pan over low-medium heat, until coconut is lightly browned. Set aside to cool. Reserve rest of untoasted coconut.

Step 4Preheat oven to 350.

Step 5Sift together flour, baking soda and salt in a large bowl. Set aside.

Step 6In separate bowl, beat together coconut oil, sugars and eggs. Add vanilla and pudding mix. Mix well.

Step 7Fold wet bowl into flour bowl. Add the chocolate chips, toasted coconut, and 3/4 of the pineapple. Fold gently until all incorporated together.

Step 8On top of the cookie balls, press down a pinch of raw coconut, pinch of pineapple and pinch of mango.

Step 9Roll tablespoon-full amounts in your hand and place on greased cookie sheet / pan.

Step 10Bake for 8-10 minutes.
