A delicious recipe given to me by my mom. Not sure where it originated, but it's a summertime favorite.

Ingredients

  • 2 1/2 sticks butter
  • 1 cup brown sugar
  • 6-7 tablespoons instant iced tea (regular or flavored, i like lemon)
  • 1 - egg yolk
  • 2 teaspoons vanilla extract
  • 2 1/4 cups flour
  • FOR GLAZE:
  • 1 cup powdered sugar
  • 5 teaspoons hot water or milk
  • 1/4 teaspoon vanilla extract

How To Make iced tea cookies

  • Step 1
    Preheat oven to 350° F.
  • Step 2
    Beat butter and sugar in large mixer bowl until light and fluffy. Beat in tea, egg yolk and vanilla extract. Gradually stir in flour. Drop by heaping teaspoon 2 inches apart onto ungreased baking sheets.
  • Step 3
    Bake 12 to 15 minutes or until lightly golden. Cool & brush with glaze. Cool completely prior to serving.
  • Step 4
    To make the glaze, combine all ingredients, and let thicken before brushing over cookies.
