Great one for St. Patrick's Day! I got this recipe many years ago at a Christmas Cookie Exchange party. And it has been a favorite every since (along with a couple modifications from me!).

  • 4 squares
    chocolate, unsweetened
  • 2/3 c
    vegetable oil
  • 2 c
    brown sugar, firmly packed
  • 3
  • 1 1/4 c
    all purpose flour
  • 1/2 tsp
    baking soda
  • 1/4 tsp
  • 1 tsp
  • 4 c
    confectioners' sugar
  • 3/4 c
  • 2 tsp
    peppermint extract
  • 3-4 drops
    green food colorig
  • 3 Tbsp
  • 6 oz
    chocolate chips
  • 3 Tbsp

How to Make Grasshopper Bars


  1. Cake: In double boiler, melt 4 squares unsweetened chocolate and oil. Add brown sugar, flour, eggs, baking soda, salt, and vanilla. Beat well. Place in ungreased 9" x 13" pan for 35 minutes. Cool.
  2. Icing: Combine confectioners' sugar, 3/4 cup butter, peppermint extract, food coloring, and 3 tablespoons milk. Beat until fluffy and spread onto cooled chocolate cake.
  3. Melt in double boiler chocolate chips and 3 tablespoons butter. Drizzle over icing and spread to make chocolate layer solid. Refrigerate to set chocolate.
  4. To cut into bars, warm up a knife to avoid chocolate from splitting.
