Great one for St. Patrick's Day! I got this recipe many years ago at a Christmas Cookie Exchange party. And it has been a favorite every since (along with a couple modifications from me!).

Ingredients

  • 4 squares - chocolate, unsweetened
  • 2/3 cup vegetable oil
  • 2 cups brown sugar, firmly packed
  • 3 - eggs
  • 1 1/4 cups all purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
  • 4 cups confectioners' sugar
  • 3/4 cup butter
  • 2 teaspoons peppermint extract
  • 3-4 drops - green food colorig
  • 3 tablespoons milk
  • 6 ounces chocolate chips
  • 3 tablespoons butter

How To Make grasshopper bars

  • Step 1
    Cake: In double boiler, melt 4 squares unsweetened chocolate and oil. Add brown sugar, flour, eggs, baking soda, salt, and vanilla. Beat well. Place in ungreased 9" x 13" pan for 35 minutes. Cool.
  • Step 2
    Icing: Combine confectioners' sugar, 3/4 cup butter, peppermint extract, food coloring, and 3 tablespoons milk. Beat until fluffy and spread onto cooled chocolate cake.
  • Step 3
    Melt in double boiler chocolate chips and 3 tablespoons butter. Drizzle over icing and spread to make chocolate layer solid. Refrigerate to set chocolate.
  • Step 4
    To cut into bars, warm up a knife to avoid chocolate from splitting.
