Great one for St. Patrick's Day! I got this recipe many years ago at a Christmas Cookie Exchange party. And it has been a favorite every since (along with a couple modifications from me!).

Ingredients
- 4 squares - chocolate, unsweetened
- 2/3 cup vegetable oil
- 2 cups brown sugar, firmly packed
- 3 - eggs
- 1 1/4 cups all purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon vanilla
- 4 cups confectioners' sugar
- 3/4 cup butter
- 2 teaspoons peppermint extract
- 3-4 drops - green food colorig
- 3 tablespoons milk
- 6 ounces chocolate chips
- 3 tablespoons butter

Step 1Cake: In double boiler, melt 4 squares unsweetened chocolate and oil. Add brown sugar, flour, eggs, baking soda, salt, and vanilla. Beat well. Place in ungreased 9" x 13" pan for 35 minutes. Cool.

Step 2Icing: Combine confectioners' sugar, 3/4 cup butter, peppermint extract, food coloring, and 3 tablespoons milk. Beat until fluffy and spread onto cooled chocolate cake.

Step 3Melt in double boiler chocolate chips and 3 tablespoons butter. Drizzle over icing and spread to make chocolate layer solid. Refrigerate to set chocolate.

Step 4To cut into bars, warm up a knife to avoid chocolate from splitting.
