gewurz-knusperchen - spice christmas cookies
This is a German spice cut-out cookie recipe from my mother-in-law. They are absolutely wonderful! She says the authentic German way to make these is not to use a mixer. She measures all ingredients onto the countertop, cuts in butter, and "kneads" by hand until it is all combined. These cookies are best when rolled very thin.
Blue Ribbon Recipe
We love an heirloom Christmas cookie and these Gewurz-Knusperchen are a delicious spiced German cookie. If we had to guess, they're the German version of a sugar cookie. It's buttery and crispy with a spice and hazelnut flavor. Once baked, the edges are slightly crisp and the center is a bit chewy. The cookies themselves have a mild flavor and are not overly sweet. We decided to top them with a thin powdered sugar glaze and festive sprinkles. Wonderful with a cup of tea.
Ingredients
- 1 stick butter, plus 2 Tbsp
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour (minus 1 Tbsp)
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon cardamom
- 1/4 teaspoon cloves
- 1 cup ground hazelnut

Step 1Preheat oven to 350 degrees F. Cream butter and sugar until well blended. Add egg and vanilla.

Step 2In a separate bowl, combine all dry ingredients and mix well.

Step 3Gradually add the dry mixture to the butter mixture.

Step 4A dough will form.

Step 5Roll out dough on a floured board to 1/8" thickness.

Step 6Cut with your favorite shaped cookie cutters.

Step 7Place on ungreased cookie sheets.

Step 8Bake at 350 just until edges start to turn a slight brown; about 10 - 12 minutes.

Step 9Cool and decorate as desired.

Step 10If using a glaze, let it dry.
