galettes (waffle cookie)
My mother and her mother before made these delicious, thick, waffle cookies every Christmas!

Ingredients
- 1 lb. - butter
- 1/4 tsp. - salt
- 1tsp. - cinnamon
- 12 - eggs
- 3/4 cup - white sugar
- 2 boxes dark brown sugar
- 1 1/2 tsp - vanilla
- 7 cups - flour
How To Make galettes (waffle cookie)

Step 1Mix butter and sugar together. Add eggs and vanilla, beat by hand. Add other ingredients.

Step 2Mix in flour a little at a time to form stiff dough. Test cook one, may need to add additional flour. Cookie should be thick and chewy.

Step 3Must use waffle iron. Drop spoonful of dough on waffle iron. Do not over cook.

Step 4May dust with confectioner's sugar (optional).
