This was mom's go-to recipe when I was young. We loved peanut butter and couldn't wait for her Double Peanut Butter Cookies to come out of the oven.

Ingredients

1 1/2 c
all purpose flour
1/2 c
sugar
1/2 tsp
baking soda
1/4 tsp
salt
1/2 c
go bold with butter
1/4 c
corn syrup, light
1 Tbsp
milk
1/4 c
peanuts, chopped
1/2 c
peanut butter for filling

How to Make Double Peanut Butter Cookies

Step-by-Step

  • 1In bowl, combine dry ingredients with a whisk.
  • 2Cut in butter and peanut butter with dry ingredients.
  • 3Stir in corn syrup, milk, chopped peanuts.
  • 4Shape dough into a two-inch diameter roll and wrap with plastic wrap. Chill 3 hrs.
  • 5Preheat oven to 350 when ready to bake.
    Cut dough into 1/4 inch thick slices, cutting 24 slices.
  • 6Place 12 slices on cookie sheet sprayed with Pam.
    Top each slice with 1/2 t. peanut butter.
    Cover with second cookie slice, seal edges with a fork.
  • 7Bake at 350 degrees for 12-15 min.
    Cool before eating.
