double peanut butter cookies

This was mom's go-to recipe when I was young. We loved peanut butter and couldn't wait for her Double Peanut Butter Cookies to come out of the oven.

Ingredients

  • 1 1/2 cups all purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup go bold with butter
  • 1/4 cup corn syrup, light
  • 1 tablespoon milk
  • 1/4 cup peanuts, chopped
  • 1/2 cup peanut butter for filling

How To Make double peanut butter cookies

  • Step 1
    In bowl, combine dry ingredients with a whisk.
  • Step 2
    Cut in butter and peanut butter with dry ingredients.
  • Step 3
    Stir in corn syrup, milk, chopped peanuts.
  • Step 4
    Shape dough into a two-inch diameter roll and wrap with plastic wrap. Chill 3 hrs.
  • Step 5
    Preheat oven to 350 when ready to bake. Cut dough into 1/4 inch thick slices, cutting 24 slices.
  • Step 6
    Place 12 slices on cookie sheet sprayed with Pam. Top each slice with 1/2 t. peanut butter. Cover with second cookie slice, seal edges with a fork.
  • Step 7
    Bake at 350 degrees for 12-15 min. Cool before eating.
