doris's gluten free breakfast bars

I was looking for a great gluten free copycat recipe for Belvita's cookies and was not able to find one. I developed one only to find it was too dry to hold together as a cookie so added a couple extra wet ingredients and the breakfast bar was created. These are moist and quite filling.

1 1/3 cgluten free pastry flour

1/2 tspxantham gum

1 1/4 crolled oats
-
1/4 csugar

1/4 cbrown sugar, firmly packed

1 tspbaking powder

1 tspbaking soda
-
1/2 tspsalt
-
pinchcinnamon
-
1/2 ccranberries, dried
-
1/2 cwalnuts, chopped

2 Tbspbutter, melted
-
1/2 coil, neutral tasting
-
2 Tbspoil, neutral tasting
-
1 Tbspmilk, or any non dairy version
-
1 tsphoney
-
1egg, large
-
1/2 capplesauce
How To Make doris's gluten free breakfast bars

1Preheat oven to 350. Grease an 8x8 pan and set aside. Thoroughly combine all dried ingredients except walnuts and cranberries into large mixing bowl.

2Stir in wet ingredients until well moistened ( melted butter, oil, milk, honey, applesauce, and egg ). Add walnuts and cranberries. Spoon dough into prepared pan and smooth top. Bake at 360 for 25-30 minutes or until golden on top and toothpick comes out dry from center.

3Allow to cool in pan completely before cutting into bars. Enjoy!!!
