doris's gluten free breakfast bars

I was looking for a great gluten free copycat recipe for Belvita's cookies and was not able to find one. I developed one only to find it was too dry to hold together as a cookie so added a couple extra wet ingredients and the breakfast bar was created. These are moist and quite filling.

Ingredients

  • 1 1/3 cups gluten free pastry flour
  • 1/2 teaspoon xantham gum
  • 1 1/4 cups rolled oats
  • 1/4 cup sugar
  • 1/4 cup brown sugar, firmly packed
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • pinch cinnamon
  • 1/2 cup cranberries, dried
  • 1/2 cup walnuts, chopped
  • 2 tablespoons butter, melted
  • 1/2 cup oil, neutral tasting
  • 2 tablespoons oil, neutral tasting
  • 1 tablespoon milk, or any non dairy version
  • 1 teaspoon honey
  • 1 - egg, large
  • 1/2 cup applesauce

How To Make doris's gluten free breakfast bars

  • Step 1
    Preheat oven to 350. Grease an 8x8 pan and set aside. Thoroughly combine all dried ingredients except walnuts and cranberries into large mixing bowl.
  • Step 2
    Stir in wet ingredients until well moistened ( melted butter, oil, milk, honey, applesauce, and egg ). Add walnuts and cranberries. Spoon dough into prepared pan and smooth top. Bake at 360 for 25-30 minutes or until golden on top and toothpick comes out dry from center.
  • Step 3
    Allow to cool in pan completely before cutting into bars. Enjoy!!!
