Another old recipe of my Grams. Always loved these soft chocolate cookies. Enjoy!

Ingredients
- 3 ounces unsweetened, chocolate - i used only 2 ounces
- 1/4 cup hot strong coffee
- 1/2 cup butter, softened
- 1 cup brown sugar, firmly packed
- 1 - egg
- 2 cups flour
- 1/2 teaspoon each - baking soda & salt
- 1/2 cup sour cream
- 1/2 cup coconut
- some - coconut extract would be good in these cookies as well - optional
- FROSTING
- 1 1/2 ounces unsweetened chocolate
- 1/4 cup sour cream
- 1 tablespoon softened, butter
- 1 1/2 - 2 cups confectioners' sugar
- flaked - coconut for garnish
How To Make ~ coconut island cookies ~ grams

Step 1Preheat oven to 375 degree F. Spray baking sheet with non stick cooking spray. Set aside. In a small saucepan, combine chocolate with 1/4 cup hot coffee, melt over low heat, stirring constantly.

Step 2In a medium mixing bowl, cream sugar with the butter.

Step 3Add egg and chocolate / coffee mixture. Mix well.

Step 4Sift flour, soda and salt - add to coffee mixture alternately with sour cream , ending with flour.

Step 5Stir in coconut. Drop by spoonfuls onto prepared baking sheet.

Step 6Bake for 10 - 12 minutes. Move to cooling racks.

Step 7Frosting: In a medium saucepan, combine chocolate sour cream and butter, heat until chocolate melts.

Step 8Remove from heat and stir in sugar, blending until consistency for spreading.

Step 9Frost warm cookies and sprinkle with coconut. Enjoy these soft, yummy cookies.
