I was given this recipe by a friend. It's perfect as a healthy snack or for camping/hiking trips.

Ingredients

  • 2 c
    dates, soaked in water
  • 1/2 c
    shredded coconut
  • 1/2 c
    cocoa powder
  • 2 c
    almonds
  • 1 Tbsp
    coconut oil
  • 1 Tbsp
    vanilla extract
  • 1/4 tsp
    almond extract
  • 1/2 tsp
    salt

How to Make Chocolate Coconut Energy Balls

Step-by-Step

  1. Pulse all ingredients in food processor and scrape the edges. Then blend the mixture until it appears wet and sticky.
  2. Roll dough into balls. If you choose, you can roll the balls in a bowl of extra coconut flakes.
  3. Store in an airtight container for 2 weeks.
