chocolate coconut energy balls

I was given this recipe by a friend. It's perfect as a healthy snack or for camping/hiking trips.

Ingredients

  • 2 cups dates, soaked in water
  • 1/2 cup shredded coconut
  • 1/2 cup cocoa powder
  • 2 cups almonds
  • 1 tablespoon coconut oil
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1/2 teaspoon salt

How To Make chocolate coconut energy balls

  • Step 1
    Pulse all ingredients in food processor and scrape the edges. Then blend the mixture until it appears wet and sticky.
  • Step 2
    Roll dough into balls. If you choose, you can roll the balls in a bowl of extra coconut flakes.
  • Step 3
    Store in an airtight container for 2 weeks.
