Needed something to do with a can of pumpkin and had some cookie dough in fridge so came up with this. It's like pumpkin cheese cake with a cookie dough topping. Yum

Ingredients

  • 2 cups graham cracker crumbs
  • 1 stick butter melted
  • 15 ounces can pumpkin
  • 8 ounces cream cheese softened
  • 1 cup sugar
  • 1 large egg
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1 package refrigerated chocolate chip cookie dough or make your own

How To Make chocolate chip cookie pumpkin bars

  • Step 1
    Spray a 9 x 13 pan. Preheat oven 325 degrees
  • Step 2
    Melt butter and stir in graham cracker crumbs. Press in bottom of prepared pan.
  • Step 3
    Beat all the remaining ingredients except cookie dough until creamy. Pour over graham cracker crust. Spread out evenly
  • Step 4
    Cut up the cookie dough into small pieces and sprinkle evenly over top of pumpkin mixture.
  • Step 5
    Bake about 20 to 25 minutes until cookie dough is done.
