chocolate almond joyfuls

A friend said they love Halloween as they buy candy that they love to eat, in this case Almond Joys. So I whipped up this recipe and now everyone wants me to make these for them for Christmas. The coconut flavor doesn't appear till the end of munching the cookie that gives a wonderful afterglow of flavor.

Ingredients

  • 21/4 cups all purpose flour
  • 1 1/2 cups sugar
  • 1 cup butter, room temperature
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 4 tablespoons cocoa powder
  • 3 tablespoons chocolate syrup
  • 1 teaspoon espresso powder
  • 1 teaspoon almond extract
  • 2 cups chocolate morsels
  • 2 1/2 cups shredded coconut
  • 1 cup slivered almonds

How To Make chocolate almond joyfuls

  • Step 1
    Preheat oven to 375 degrees F.
  • Step 2
    Combine flour, cocoa, baking soda and salt in small bowl. Beat butter, granulated sugar, espresso powder, chocolate syrup and almond extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture.
  • Step 3
    Stir in coconut, morsels and nuts. Batter will be sticky. Drop by rounded tablespoon onto baking sheets lined with parchment paper.
  • Step 4
    Bake for 9 to 10 minutes or until done. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
