cashew butter cookies
I had a jar of cashew butter in the pantry that I wasn't using very quickly and I thought I'd experiment. I don't really like peanut butter cookies all that much, but my hubby always requests them for Christmas. This recipe is a fairly straight forward peanut butter cookie recipe with a couple of twists.

Ingredients
- 1/2 cup butter
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, firmly packed
- 1/2 cup cashew butter
- 1 - egg
- 1/2 teaspoon vanilla extract
- 1/2 cup cake flour
- 3/4 cup all purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda

Step 1Cook the butter until the milk solids are a nutty brown, then chilll until set up but still soft. Cream sugars and butters, then stir in egg and vanilla. Combine flours and baking soda and baking powder, then add to butter mixture. Stir until just combined. Scoop about 1-1/2 tablespoons of dough and roll into a ball, then squish (like a peanut butter cookie!). I used a cookie stamp, but the old-fashioned squish with a fork would be perfect. My oven is kooky, but I went about 15-18 minutes at 350 degrees. Bake until the edges juuuust barely color. Makes about 20 cookies.
