Next time I'll try fresh apples - what the heck! Maybe I'll try an apple extract with the dried apples to boost the apple flavor.

Ingredients

  • 3 small
    apples-dehydrated
  • 1/2 bag(s)
    carmel bits
  • 2-1/4 c
    flour
  • 1 tsp
    baking soda
  • 1 tsp
    salt
  • 1 c
    butter
  • 3/4 c
    sugar
  • 3/4 c
    brown sugar
  • 1 tsp
    vanilla extract
  • 2 large
    eggs

How to Make Carmel Apple Cookies

Step-by-Step

  1. Cream butter.
  2. Add sugars and blend.
  3. Add vanilla. Blend.
  4. Add eggs, one at a time, beating well after each addition.
  5. Gradually beat in dry ingredients.
  6. Chop apples (or crumble them!) and stir into mix.
  7. Add carmel bits. Mix to distribute.
  8. Place mixture into a bowl. Chill for 2 hours (or overnight).
  9. Preheat oven to 375F.
  10. Line cookie sheets with parchment paper (carmel is VERY sticky - so next time I may sprinkle flour on the sheets!).
  11. Using a teaspoon, drop cookies onto parchment -- allowing 2 inches between cookies (they spread).
  12. Roll in Chopped Peanuts (OPTIONAL!).
  13. Bake at 375 for 8-12 minutes (my gas oven likes to play with me!).
  14. Cool on the baking sheet for at least 5 minutes. I found that peeling the cookies off (take hot parchment paper in hand, turn upside down and peel cookie off) leads to less cookie stuck on the parchment - and a lot of creative swearing as you try to cool your hands down!
