Next time I'll try fresh apples - what the heck! Maybe I'll try an apple extract with the dried apples to boost the apple flavor. If you have any tips - let me know!

Ingredients

  • 3 small apples-dehydrated
  • 1/2 bag carmel bits
  • 2-1/4 cup flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup butter
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs

How To Make carmel apple cookies

  • Step 1
    Cream butter.
  • Step 2
    Add sugars and blend.
  • Step 3
    Add vanilla. Blend.
  • Step 4
    Add eggs, one at a time, beating well after each addition.
  • Step 5
    Gradually beat in dry ingredients.
  • Step 6
    Chop apples (or crumble them!) and stir into mix.
  • Step 7
    Add carmel bits. Mix to distribute.
  • Step 8
    Place mixture into a bowl. Chill for 2 hours (or overnight).
  • Step 9
    Preheat oven to 375F.
  • Step 10
    Line cookie sheets with parchment paper (carmel is VERY sticky - so next time I may sprinkle flour on the sheets!).
  • Step 11
    Using a teaspoon, drop cookies onto parchment -- allowing 2 inches between cookies (they spread).
  • Step 12
    Roll in Chopped Peanuts (OPTIONAL!).
  • Step 13
    Bake at 375 for 8-12 minutes (my gas oven likes to play with me!).
  • Step 14
    Cool on the baking sheet for at least 5 minutes. I found that peeling the cookies off (take hot parchment paper in hand, turn upside down and peel cookie off) leads to less cookie stuck on the parchment - and a lot of creative swearing as you try to cool your hands down!
