butterscotch chip cookies
My mom made these every year at Christmas.

Ingredients
- 1 cup shortening (or 3/4 c. butter)
- 2 cups all purpose flour, unsifted
- 1 teaspoon baking soda
- 1 cup sugar
- 2 - eggs
- 1/2 cup light brown sugar, packed
- 1 teaspoon vanilla extract
- 12 ounces butterscotch chips
How To Make butterscotch chip cookies

Step 1Cream shortening (or Butter), sugar, brown sugar and vanilla until light and fluffy. Add eggs and beat well.

Step 2Combine flour and baking soda. Add to creamed mixture. Mix well.

Step 3Stir in butterscotch chips.

Step 4Drop by teaspoonful onto un-greased cookie sheet.

Step 5Bake at 350 degrees for 10 to 12 minutes or until lightly browned. Cool slightly before removing from cookie sheet.

Step 6You can substitute peanut butter, chocolate or white chocolate chips if you like
