This recipe has been passed down in my family! I know there are others out there but I like this one the best! They are so good to make and everyone in my family just loves them! Enjoy!

Ingredients

  • - 1 c. margarine or butter
  • - 1 c. solid shortening
  • - 2 c. packed brown sugar
  • - 2 c. granulated sugar
  • - 4 eggs
  • - 2 tsp. vanilla
  • - 2 c. quick oats (uncooked)
  • - 4 c. flour
  • - 2 tsp. baking soda
  • - 2 tsp. baking powder
  • - 1 c. coconut
  • - 1 c. pecans, chopped
  • - 2 c. rice krispies
  • - 6 oz. chocolate chips

How To Make buffalo chip cookies

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    In a large mixing bowl, cream together margarine and shortening. Add sugars, eggs and vanilla; mix well. Stir in oats, flour, baking power and baking soda.
  • Step 3
    When well blended, stir in coconut, pecans, Rice Krispies and chocolate chips.
  • Step 4
    When batter is thoroughly mixed, measure 1/4 cup batter for each cookie on a large ungreased baking sheet. Bake 10 to 12 minutes or until edges are golden. For a crisper cookie, bake 12 to 15 minutes. Allow cookies to cool slightly on baking sheet before removing. Makes about 4 dozen large cookies.
