buffalo chip cookies
We raise water buffalo on our farm. One of my step sons said these cookies look like a buffalo chip, hence the name. Cake flour adds a lightness to them. Gluten free flour blends work just fine.

Ingredients
- 2 cups cake flour or gluten free all purpose flour
- 1/4 cup cocoa powder, unsweetened
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup real butter
- 3/4 cup brown sugar, firmly packed
- 1/2 cup cane sugar
- 2 - eggs
- 2 teaspoons vanilla extract
- 5 ounces semi-sweet chocolate chips
- 5 ounces butterscotch chips
How To Make buffalo chip cookies

Step 1Preheat oven to 375 degrees. Mix flour, cocoa powder, baking soda, and salt in a medium bowl. Set aside.

Step 2Cream butter and sugars with a stand mixer on med-low speed. Add eggs and vanilla extract.

Step 3Stir in chocolate and butterscotch chips.

Step 4Drop in tablespoons-full on ungreased cookie sheet. Bake for 9-11 minutes. Let cool slightly and move with a spatula to a cooling rack. Enjoy!
