Had some banana to get rid of and hubby wanted peanut butter cookies this worked out very well. Enjoy! Found the peanut butter cookie in an old recipe box and just added things too it.

Ingredients

  • 1/2 c
    softened butter cut in cubes
  • 1 large
    over ripe banana
  • 3/4 c
    light brown sugar packed
  • 1 large
    egg
  • 1 tsp
    vanilla extract
  • 1 c
    peanut butter
  • 1 1/2 c
    all purpose flour
  • 1/2 tsp
    baking soda
  • 1 pinch
    salt
  • 1/2 c
    chopped walnuts

How to Make Banana, Peanut Butter, Walnut Cookies

Step-by-Step

  1. with mixer cream together banana, butter, and sugar
  2. In another bowl mix egg and vanilla together. Then gradually mix into butter mixture.
  3. Stir in peanut butter, sift dry ingredience together mix into wet ingredience to form a soft dough. Add chopped walnuts mixing well.
  4. Chill dough at least 30 minutes, until firm.
  5. pre heat oven to 350 degrees, grease two cookie sheets, with a small melon baller dip into dough and roll into balls
  6. place balls on cookie sheets , with a small fork and dipping the fork into flour press a crisscross on top of cookie pushing them down.
  7. add a little sea salt on each one bake 13 minutes place on cooling racks.
