I want to Credit Doreen Fish because i used her coconut flour sugar cookie recipe as a base for mine. I substitute a few ingredients for allergy friendliness and added a few for spunk

Ingredients

  • 4 - large eggs
  • 1/4 cup brown sugar, firmly packed
  • 1/2 cup sugar
  • 1 teaspoon gluten free vanilla
  • 1/2 cup enjoy life choclate chips
  • 1/4 teaspoon salt
  • 1/2 cup melted coconut oil (can be sub. with butter or other oil)
  • 3/4 cup sifted coconut flour

How To Make allergy friendly chocolate chip cookies

  • Step 1
    preheat oven 375
  • Step 2
    Wisk eggs till frothy then combine with melted coconut oil sugar brown sugar and vanilla
  • Step 3
    Sift in coconut flour and salt then mix by hand with a wooden spoon being careful not to over mix.
  • Step 4
    Let stand 5-10 minutes to allow the coconut flour to absorb the moisture.
  • Step 5
    Add choclate chips then knead dough by hand till well combined
  • Step 6
    roll dough into ping pong sized balls and press flat
  • Step 7
    bake 15 minutes, let cool before transferring
