I want to Credit Doreen Fish because i used her coconut flour sugar cookie recipe as a base for mine. I substitute a few ingredients for allergy friendliness and added a few for spunk

large eggs
1/4 c
brown sugar, firmly packed
1/2 c
sugar
1 tsp
gluten free vanilla
1/2 c
enjoy life choclate chips
1/4 tsp
salt
1/2 c
melted coconut oil (can be sub. with butter or other oil)
3/4 c
sifted coconut flour

How to Make Allergy Friendly Chocolate Chip Cookies

Step-by-Step

  • 1preheat oven 375
  • 2Wisk eggs till frothy then combine with melted coconut oil sugar brown sugar and vanilla
  • 3Sift in coconut flour and salt then mix by hand with a wooden spoon being careful not to over mix.
  • 4Let stand 5-10 minutes to allow the coconut flour to absorb the moisture.
  • 5Add choclate chips then knead dough by hand till well combined
  • 6roll dough into ping pong sized balls and press flat
  • 7bake 15 minutes, let cool before transferring
