Ingredients
- 12 tablespoons butter
- 1 cup sugar
- 1 - egg
- 2 - egg yolks
- 2 tablespoons cognac
- 2 1/2 cups cornstarch
- 1 cup flour
- 1 teaspoon vanilla
- 1/2 teaspoon baking powder
- - zest of 1/2 lemon
- - dulce de leche
- - grated coconut
How To Make alfajores - cookies with dulcedeleche and coconut

Step 1Preheat oven to 300 degrees.

Step 2Cream butter and sugar. Add rest of ingredients except dulce de leche and coconut. Knead dough until smooth. Let rest 15 minutes.

Step 3Roll dough to 1/4" thick and cut in 2" circles. You should get 24 cookies. Place on greased cookie sheet and bake 20 minutes.

Step 4When cool, spread dulce de leche on bottoms of 12 cookies and top with another cookie, letting some dulce de leche ooze out. Roll sides in grated coconut.
