Ingredients

  • 12 tablespoons butter
  • 1 cup sugar
  • 1 - egg
  • 2 - egg yolks
  • 2 tablespoons cognac
  • 2 1/2 cups cornstarch
  • 1 cup flour
  • 1 teaspoon vanilla
  • 1/2 teaspoon baking powder
  • - zest of 1/2 lemon
  • - dulce de leche
  • - grated coconut

How To Make alfajores - cookies with dulcedeleche and coconut

  • Step 1
    Preheat oven to 300 degrees.
  • Step 2
    Cream butter and sugar. Add rest of ingredients except dulce de leche and coconut. Knead dough until smooth. Let rest 15 minutes.
  • Step 3
    Roll dough to 1/4" thick and cut in 2" circles. You should get 24 cookies. Place on greased cookie sheet and bake 20 minutes.
  • Step 4
    When cool, spread dulce de leche on bottoms of 12 cookies and top with another cookie, letting some dulce de leche ooze out. Roll sides in grated coconut.
